It turns out that in a cup of raw green beans there is about 30% of your recommended Vitamin C, 15% of your recommended Vitamin A and 4g of fiber. In addition, for a serving of 1 cup of green beans, there are only 34 calories! Green beans are pretty healthy!

Why are they "Green" Beans?

Do you know why they are called "green" beans? It is because they are actually the unripe fruit, still green! Wait a minute though, did you hear fruit too? It turns out that beans are actually a legume which is a subset of fruits. So although we are used to calling green beans vegetables, they are really fruits... if you remember the song from when you were a kid, "Beans, beans, the magical fruit", it really is true! Besides, "beans, beans, the magical vegetable" really doesn't sound as good anyways!

Green Bean Nutrition... Watch which prepared beans you eat

The most important thing when it comes to green beans, is watch out when you buy them in a can! You have to make sure there is not too much sodium in there. If you look at the nutrition label below for canned green beans, one cup can have 400mg of sodium and the daily FDA recommended allowance for salt is only 2300mg a day. That's 25% of your allowance. Instead, look for canned green beans with no salt. Or better yet, buy frozen green beans!
