Shrimp Salad with Homemade Balsamic Vinaigrette

Easy grilled shrimp and a homemade balsamic vinaigrette. Great summer salad that you can make very quickly and is sure to be a favorite.

Ingredients:

1/2 cup, crumbled Cheese, feta

1 tsp, leaves Spices, basil, dried

1 tsp, ground Spices, oregano, dried

2 dash Spices, pepper, black

2 tbsp Vinegar, balsamic

1 tablespoon Salad dressing, italian dressing, reduced fat

1 tablespoon Oil, olive, salad or cooking

10 large Olives, ripe, canned (small-extra large)

1 medium Cucumber, peeled, raw

3 cup shredded Lettuce, green leaf, raw

1/3 onion Onions, sweet, raw

1 lb Crustaceans, shrimp, mixed species, raw

Directions:

Step 1:Marinate shrimp in the italian dressing for about 5 minutes. Peel the shrimp if desired.5 mins
Step 2:Cut vegetables as desired. We usually use red onions.2 mins
Step 3:Make balsamic vinaigrette by combining olive oil, balsamic vinegar, basil, oregano and pepper to taste. Toss with lettuce and other vegetables.2 mins
Step 4:In a grill pan, grill shrimp over high heat for about 7 minutes. This depends on the size and you are looking for the shrimp to turn pink but not curl up.7 mins
Step 5:Put everything together by placing olives and feta over vegetables. We really like kalamata olives. Arrange shrimp and serve. Enjoy.2 mins
