Amazing Potato Leek Soup
This soup is really easy to make and really good. The potatoes and leeks cook together and are then put in a food processor. Probably one of the best soup recipes we have tried.

Ingredients:
1 cup Milk, reduced fat, fluid, 2% milkfat, with added nonfat milk solids and vitamin A
2 tbsp Butter, without salt
6 cup Soup, chicken broth, canned, less/reduced sodium
3 cup Leeks, (bulb and lower leaf-portion), raw
4 cup, diced Potatoes, white, flesh and skin, raw
2 cup 8 fl oz Water, tap, drinking
Directions:
| Step 1: | Peel the potatoes and chop into half inch cubes. Add to large stock pot. | 5 mins |
| Step 2: | Clean the leaks very thoroughly to remove all sand one stalk at a time. Thinly slice, about a quarter of an inch, and add to the pot. | 5 mins |
| Step 3: | Add the chicken broth and water, bring to a boil and then reduce heat and let simmer for at least an hour. | 60 mins |
| Step 4: | Scoop about one or two cups at a time into a food processor or blender and process until smooth with small potato chunks. Pour back into pot and repeat about 8 times. | 15 mins |
| Step 5: | Stir in butter and milk. The butter is optional but adds a nice flavor. | 1 min |
| Step 6: | Serve. Freezes nicely for later use. | 1 min |
