Amazing Potato Leek Soup

This soup is really easy to make and really good. The potatoes and leeks cook together and are then put in a food processor. Probably one of the best soup recipes we have tried.

Recipe is For: Omnivore (Meat and Veggies)

Ingredients:

1 cup Milk, reduced fat, fluid, 2% milkfat, with added nonfat milk solids and vitamin A

2 tbsp Butter, without salt

6 cup Soup, chicken broth, canned, less/reduced sodium

3 cup Leeks, (bulb and lower leaf-portion), raw

4 cup, diced Potatoes, white, flesh and skin, raw

2 cup 8 fl oz Water, tap, drinking

Directions:

Step 1:Peel the potatoes and chop into half inch cubes. Add to large stock pot.5 mins
Step 2:Clean the leaks very thoroughly to remove all sand one stalk at a time. Thinly slice, about a quarter of an inch, and add to the pot.5 mins
Step 3:Add the chicken broth and water, bring to a boil and then reduce heat and let simmer for at least an hour.60 mins
Step 4:Scoop about one or two cups at a time into a food processor or blender and process until smooth with small potato chunks. Pour back into pot and repeat about 8 times.15 mins
Step 5:Stir in butter and milk. The butter is optional but adds a nice flavor.1 min
Step 6:Serve. Freezes nicely for later use.1 min
