Eggplant Fra Diavolo

Ingredients:
1/4 tsp Spices, pepper, black
1 tsp Spices, pepper, red or cayenne
1/4 tsp Salt, table
1 tablespoon Oil, olive, salad or cooking
2 1/2 cup (1” cubes) Eggplant, cooked, boiled, drained, without salt
3 cloves Garlic, raw
1 cup, chopped or diced Onions, frozen, chopped, cooked, boiled, drained, without salt
14 oz Tomatoes, crushed, canned
1 1/4 cup, chopped Peppers, sweet, red, raw
1 cup Quinoa, uncooked
1/2 cup Tomato sauce, no salt added
Directions:
| Step 1: | Cut eggplant into one inch cubes. Cut red onion in half and slice lengthwise. Chop red pepper. Bring two cups of water to boil in sauce pan and add quinoa, returning to boil, simmer for fifteen minutes. In large skillet, heat oil over med high heat. | 10 mins |
| Step 2: | Add red onion and red pepper, cooking until fragrant, approx five minutes. | 5 mins |
| Step 3: | Add garlic and stir. | 2 mins |
| Step 4: | Add eggplant and crushed red peppper flakes. Cook until eggplant is lightly browned, stirring frequently, five to seven minutes. | 7 mins |
| Step 5: | Add diced tomatoes, Fire roasted recommended, tomato sauce and salt and pepper to taste. Simmer on low heat. | 5 mins |
