Ingredients:

1 large Egg, whole, raw, fresh

3 tsp Spices, coriander seed

1 dash Spices, pepper, black

1 tablespoon Oil, olive, salad or cooking

2 cup Soup, stock, beef, home-prepared

2 cloves Garlic, raw

1 large Onions, raw

3 potato large (3” to 4-1/4” dia) Potatoes, red, flesh and skin, raw

1/2 can (6 oz) Tomato products, canned, paste, without salt added

1 can Alcoholic beverage, beer, regular, all

1 cup Wheat flour, white, all-purpose, enriched, calcium-fortified

4 steak Beef, chuck, shoulder clod, top blade, steak, separable lean and fat, trimmed to 0 fat, all grades, raw

Directions:

Step 1:Cube 4 pounds, about 4 steaks, making sure to trim all remaining visible fat. Heat large pot or Dutch oven over medium heat, add olive oil and brown all beef.10 mins
Step 2:Coarse chop onions and fine chop garlic. Add to pot and cook until they are wilted and translucent.5 mins
Step 3:Pour in beef stock and beer and scrape bits off bottom of pan. Add coriander, pepper and tomoato paste. You can substitute water for the beer. The best method to add the coriander is to grind your own with a mortar and pestle.5 mins

Step 5:Bring stew to boiling and then reduce to simmer. Let simmer for one to two hours.60 mins
Step 6:In small bowl, beat egg and then add into flour. Stir until it makes a dough adding flour as needed so that it is not too sticky.5 mins
Step 7:Break off teaspoon sized dumplings and drop into the stew. Let simmer until cooked and serve.10 mins
Step 8:The dumplings can be skipped, instead add two tablespoons of flour to water and stir. Then add to stew, stir and allow to thicken.1 min
