Mexican Chicken and Rice Bowl

A tasty recipe that incorporates salsa, chicken and rice for a quick and healthy Mexican dinner.

Ingredients:

1/2 cup, shredded Cheese, low-sodium, cheddar or colby

4 tbsp Sour cream, reduced fat

1 tsp, leaves Spices, oregano, dried

2 dash Spices, pepper, black

1 dash Salt, table

2 breast, bone and skin removed Chicken, broilers or fryers, breast, meat only, raw

1 cup Sauce, salsa, ready-to-serve

1/2 lime yields Lime juice, raw

2 cup Rice, brown, medium-grain, cooked

Directions:

Step 1:Start brown rice about 20 minutes ahead of time, so that after about 40 minutes, it will be ready at the same time as the chicken.20 mins
Step 2:Marinate whole chicken breasts for about 5 minutes in lime juice, sprinkled with oregano, salt and pepper.5 mins
Step 3:Either grill or bake chicken for about 15 minutes, or until inside is no longer raw.15 mins
Step 4:Fill bowl with half cup rice and add a quarter of the salsa. We like to use salsa with pieces of corn, but any will work. Slice half of one chicken breast on top and finish with a tbsp of sour cream.2 mins
Step 5:If desired, sprinkle on a little cheddar cheese. We normally skip this.1 min
