Moms Healthy Meatballs

This was my Moms recipe and it comes out amazing! Sometimes we add fresh basil which really kicks the flavor up. We make these in bulk and freeze them for a bunch of meals. You can half the recipe.

Ingredients:

1/4 cup Egg substitute, liquid

2 tbsp, ground Spices, basil, dried

1 tsp Spices, pepper, black

1 tsp Salt, table

1 tbsp Sauce, worcestershire

1 1/2 cup Cereals, QUAKER, Quick Oats, Dry

4 cloves Garlic, raw

1 medium (2-1/2” dia) Onions, raw

1 large Squash, summer, zucchini, includes skin, raw

1 cup Catsup

3 lb Beef, ground, 95% lean meat / 5% fat, raw

Directions:

Step 1:Preheat oven to 350 degrees. Finely chop onion and garlic. Coarsely grate the zucchini. Then add all ingredients together into a large bowl and mix thoroughly. We use fresh basil when we can.5 mins
Step 2:Place tin foil on cookie sheets. Using a quarter cup measuring scoop, scoop out and form meatballs. The measuring scoop helps keep them the same size so they cook evenly.5 mins
Step 3:Bake at 350 degrees for 40 minutes. Cut one in half and make sure it is finished. Serve.40 mins
