Ingredients:

1 cup, shredded Cheese, low fat, cheddar or colby

2 tbsp Spices, onion powder

1 tbsp Spices, pepper, black

4 tablespoon Oil, olive, salad or cooking

3 bunch Broccoli, raw

4 cloves Garlic, raw

5 piece whole Mushrooms, portabella, raw

1 large Onions, raw

5 potato medium (2-1/4” to 3-1/4” dia) Potatoes, red, flesh and skin, raw

2 cup Tomatoes, red, ripe, canned, stewed

1 large (2-1/4 per pound, approx 3-3/4” long, 3” dia.) Peppers, sweet, red, raw

Directions:

Step 1:Cut potatoes and mushrooms into bite sized pieces. Place in gallon size zip close bag.2 mins
Step 2:Cut broccoli and red pepper into bite sized pieces. Cut onion into quarters. Place all three in gallon size zip close bag.4 mins
Step 3:Combine oil, garlic, and spices. Mix and divide evenly into the two bags. Close the bags, and shake until coated evenly.2 mins
Step 4:Preheat oven to 450 F. Pour potato and mushroom mixture into a large roasting pan, and broccoli, red pepper, and onion mixture into another large roasting pan.0 min
Step 5:Put the potato and mushroom mixture in the oven for 5 minutes. For crisp potatoes, add 10 minutes to this step.5 mins
Step 6:Leave the potato and mushroom mixture in the oven and now put the other mixture in for 15 minutes.15 mins
Step 7:Add tomatoes to the broccoli, pepper, onion mixture and cook for 5 more minutes.5 mins
Step 8:Top both mixtures with shredded cheddar cheese and cook for 30 seconds to 1 minute.1 min
