Scallops with Lime and Chili

Ingredients:
1/2 tbsp Butter, without salt
1 tsp Spices, pepper, red, crushed
1 tbsp Oil, vegetable, palm
1 fruit (2” dia) Limes, raw
1 tsp Ginger root, raw
1/4 cup, chopped Onions, spring or scallions (includes tops and bulb), raw
16 oz Mollusks, scallop, mixed species, raw
1 cup Rice, white, medium-grain, cooked
Directions:
| Step 1: | Prepare all the ingredients and start boiling the rice so it is ready when the scallops are. Chop the scallions into slices, crush and chop the garlic, grate the ginger, grate the rind of the lime and finally squeeze the juice of the lime into a cup. | 10 mins |
| Step 2: | Rinse the scallops and pat dry. | 1 min |
| Step 3: | Heat wok or nonstick pan over high heat and add vegetable oil and butter. When it is hot add the garlic, crushed red peppers and ginger and stir fry for about a minute. You do not want the garlic to get brown. | 1 min |
