Stuffed Zucchini

Ingredients:

1 cup, shredded Cheese, mozzarella, part skim milk, low moisture

1 oz Butter, light, stick, without salt

1 can Mushrooms, canned, drained solids

1/2 cup, chopped Onions, raw

1 large Squash, summer, zucchini, includes skin, raw

1 package (6 oz) Bread stuffing, cornbread, dry mix

Directions:

Step 1:Cut zucchini lengthwise and scoop out the pulp.5 mins
Step 2:Melt butter in skillet and add onion, zucchini pulp, and mushroom with juice. Saute until onions are clear.5 mins
Step 3:Add stuffing, salt, and pepper. Let mixture cool.3 mins
Step 4:Stuff zucchini halves with mixture.2 mins
Step 5:Bake at 350 degrees until zucchini is soft.45 mins
