Ingredients:
1 cup, shredded Cheese, mozzarella, part skim milk, low moisture
1 oz Butter, light, stick, without salt
1 can Mushrooms, canned, drained solids
1/2 cup, chopped Onions, raw
1 large Squash, summer, zucchini, includes skin, raw
1 package (6 oz) Bread stuffing, cornbread, dry mix
Directions:
| Step 1: | Cut zucchini lengthwise and scoop out the pulp. | 5 mins |
| Step 2: | Melt butter in skillet and add onion, zucchini pulp, and mushroom with juice. Saute until onions are clear. | 5 mins |
| Step 3: | Add stuffing, salt, and pepper. Let mixture cool. | 3 mins |
| Step 4: | Stuff zucchini halves with mixture. | 2 mins |
| Step 5: | Bake at 350 degrees until zucchini is soft. | 45 mins |
